This was oh so yummy! I wanted a nice cool dinner last week that would be tasty and filling. I chose to make a quinoa salad filled with vegetables and some feta cheese.

I added feta cheese (about 2 ounces), I skipped the cucumber and mint (because I didn't have mint), and I didn't use fresh garlic or cilantro. I use this awesome substitute by. It is like dehydrated. I also used the pre-bought match-stick carrots rather than the diced carrots.
It took time to chop the other veggies and saute the onions and garlic but it wasn't too bad.
I am no Martha Stewart or fancy home cook. I want to feed my family healthy meals but I take short cuts if and when I can for some things (I buy freeze dried garlic by Little House), and not others (I prefer fresh vegetables except if recipe calls for canned or frozen). I don't have hours to do prep work and this works great if you can do it during your child's nap or the night before since it needs to be refrigerated before serving.
